Prosciutto Wrapped Dates


I'll be first to admit that these don't exactly win you over at first glance. You're probably saying, wtf Marichelle? Why are you featuring these little dinky shrunken.... you know what? I'm not even gonna go there. Just believe me when I say that these are the diggity bomb diggity. (oh my god, that's something my mother would do)

I was lucky enough to be invited over for dinner at P's last Saturday. Not only is she a badass blogger with a killer stockings/tights collection, but the girl CAN COOK like nobody's biz. She served these as appz, as if the cheese-spread + Spanish quince paste weren't enough. Our taste buds were pretty much parked in permanent bliss for the night.

The funny thing is, I don't even like dates. Or prunes, but I guess P has some freaky culinary magical powers that make you forget those type of things.

So get yourself some dates (better if seedless) and wrap them up in prosciutto. I would add a bit more than pictured above, I think I was a bit chintzy with the swine. You could probably broil them too, but I just baked them in 350F until the prosciutts is nice and crispy. Oh and I've also seen people stuff the dates with goat cheese.

Oh yay! This just made my day. So happy you made them - they're so ridiculously easy and good. They may be even BETTER with bacon (I mean, what isn't?), but it's a tiny bit fussier.

I think people also stuff a little hunk of Parmesan in each date before wrapping them up. Haven't tried it because I'm way too lazy, and it just seems like gilding the lily, you know?

I make a version of these often. Stuff with gorgonzola and wrapped in bacon. Best way my friends have come up with the describe them is bacon wrapped candy. they are so good, it's almost impossible to stop eating them. it is very true that they are not that appealing to look at.

yesss! i have turned some date-skeptics into fans with the bacon wrapped, cheese & walnut stuffed version of this. i like with either blue, gorgonzola, goat, or cream cheese. and with a walnut half inside all that. and with cheese and nut, it's yummy for veg-people without the meat. yummm...
